There are a number of smells that evoke a feeling of comfort and well-being, none more so than the smell of freshly baked bread. Often though that promise is not delivered and the anticipation is betrayed by a bland, tasteless lump of cooked dough. Not so at the Sweet Atelier, Duquesa Port’s very own patisserie. This boutique bakery offers a wide range of breads, cakes, pastries, all baked in-house by its award-winning owner, Mercedes Bornico.
According to Mercedes the key to a good product, is sourcing the best ingredients, whether it be the best French flour for the bread, or local produce for some of the sweeter temptations such as the Pear Tartin with Manilva Wine.
30 year-old Canadian Italian Mercedes began her career as a sou chef in London working at the prestigious Thomas Cubitt House in Belgravia, before coming to Spain to pursue a career as a pastry chef.
After studying at the CIOMijas hotel and cookery school she took up an internship at Finca Cortesin during which time she was offered a teaching post at the La Roche Hotel and Catering College which luckily for us she declined to pursue her own career as a pastry chef.
In fact it was whilst out walking her dog that Mercedes realised that one thing Duquesa Port was missing was a bakery and thus Sweet Atelier was founded.
Situated in Calle Poniente (next to the English Butcher) Sweet Atelier offers daily produced breads, cakes and pastries, with a number of speciality breads produced on the weekend, breads such as sour dough, bagels, chorizo, or sun dried tomato. Sweet Atelier are happy to produce breads, cakes and pastries to order for special occasions, parties, etc., and also cater for bars and restaurants.
Mercedes was also proud to point out that very little went to waste, typically products were available the following day with 50% off, and if still not sold, they were donated to a local food bank.
